For some Cooking and Baking is a hobbie and for some its a chore. I thought it would be fun to swap some of our favorite Holiday recipes here.



Cranberry Sauce
One bag of fresh cranberries
1- 1/2 cups of orange juice
2 tbs of sugar
add the orange juice to a pot, dump in cranberries (after you wash them and remove any stem pieces) and then toss in 2 tbs of sugar. Bring it all to a boil then turn down heat to low and let it simmer till the cranberries have all split. Simmer till you get the consistency that you like. It you like it more chunky then it will simmer less then if you like it more smooth. This is best made the night before and refrigerated.

OK I love sweet potato casseroles and nothing against the marshmallow topped ones but this is sooooooo much better. Its almost like eating a desert
Sweet Potato Casserole
OK this is made in two parts the base and the topping:
Base:
3 cups sweet potato's mashed (you can also use can Yams drained)
1 tsp vanilla
3/4 cup white sugar
2 eggs
1/3 cup of melted butter
Mix that well and place in a rectangle dish (like a 8 x 11)
Top layer:
1 cup brown sugar
1 cup coconut
1/3 cup flour
1/3 cup butter melted
1/2 cup of nuts (optional - I like to use walnuts)
mix this up well and then sprinkle on the top of the base
bake at 350 for 30 min. Mmmmmm so good!
