Pasta and potatoes with a veggie works wonders when not eating meat! It's filling and good for you!!
I think its great, you set a goal and stick to it James. I dont think I could ever go that extreme. For lent I give up meat on Fridays. On Fridays I enjoy fish.

I guess this depends on what you mean by veggies. Kind of. In other words do you plan to eat vegetables only or will you eat fake meats processed from vegetable proteins? Either way it's not hard to eat a balanced meal from the vegetable world. Lots of stuff has protein. Beans and rice is a good source of protein. Tofu. Leafy green veggies have calcium and iron. The key is to eat a variety of things. I think if you do it right you won't even miss meat. I truly and honestly never missed meat. Plus there are a lot of good meat substitutes. Light Life Sausage, Boca Burgers, Tofurkey slices, Field Roast slices, Tofu, veggie pepperoni, veggie jerkies, Gardien anything, etc etc. Check out Whole Foods or a local health food store. Always always remember that a diet of just one or two things will be bad for you no matter what those couple of things are. Variety is spice of life.
